麵筋球: , 豬肉餡(七分瘦): , 西蘭花: , 姜蔥末: , 醬油: , 老抽: , 香油: , 冰糖: , 料酒: , 薑片: , 蔥段: , 八角: , 干辣椒: , 五香粉:

步驟

1                                                                                                                                                                                                                                                                                                                            先將麵筋球用剪刀剪洞,然後用筷子在洞內蠕動幾下,食指轉轉(不要破)以便放肉餡。                                                                                                                                                

2肉先放蔥薑末,鹽, 醬油, 味精, 胡椒粉,五香粉,香油攪勻,朝一方向拌勻(不易出水)

31.將攪好的肉餡逐一的放入麵筋球內備用. 2.西蘭花放在開水內斷生,開水內放入少許鹽和油,使之更加碧綠,裝盤擺好。                                                                                                                                                                                                                                                                                                                        

4鍋內放油燒熱,下蔥段薑片八角爆香,放入獅子頭(口朝下)煎半分鐘封口,倒料酒蓋上燜半分鐘揮發,加入熱水至麵筋飄起,加入老抽,冰糖,干辣椒大火燒開,加鹽調味,中火十五分鐘,湯汁勾芡出盤。                                                                                                                                                                                                                                                                                                                        注意倒料酒燜時,不要被油花濺到
