healthy carrot cake

原料

white or whole wheat flour: 1/2 cup, baking powder: 1 tsp, cinnamon: 1 tsp, eggs: 2, honey or maple syrup: 30 ml, oil: 30 ml, apple sauce unsweetened: 1/4 cup, vanilla extract: 1 tsp, carrots, peeled and grated: 1 cup, ground cashew nuts: 1/4 cup

步驟

1preheat the oven to 180°

2in a bowl,combine the dry ingredients: flour, baking powder and mixed spice, set aside.

3in a large bowl, beat the eggs on high speed for 1 min until foamy. add in the honey and beat for another 3-5 minutes until well combine. stir in the oil, apple sauce and vanilla extract. and in half of the four mixer and stir until just combine. and add in the rest four mixer.

4fold in the grated carrots and cashew nuts.

5put the batter into a 8 inch cake tin. place in the oven and bake for 30-35 mins.
