peanut butter muffins (

原料

apple sauce (unsweetened): 1/2 C, almond butter ( I use peanut butter+ chia seed): 1/2 C, honey: 2 tbsp, vanilla extract: 1 tsp, brown sugar: 2 tbsp, large egg: 1, salt: pinch, baking soda: 1/2 tsp, baking powder: 1/2 tsp, oat flour: 1/3 C + 1 tbsp, rolled oats: 1/3 C, chopped apple: 1/2 C, lemon juice: 1 tsp, cinnamon (more if desired): 1/2 tsp, chopped pecans, optional: 3-4 tbsp

步驟

1Preheat the oven to 350 degrees F. Spray 8-9 cavities with nonstick spray and fill the other ones halfway up with water (ensures even baking). Do not use muffin liners.

2Beat together the applesauce, almond butter, honey, vanilla extract, and brown sugar in a large bowl. Beat in the egg.

3Beat in the salt, baking soda, baking powder, and oat flour.

4Beat just until combined. Stir in the old-fashioned oats.

5Remove the peel and core of an apple and finely chop the apple into small pieces. Mix with the lemon juice and then add the apples to the mixture along with 2 tablespoons of chopped pecans.

6Bake at 350 degrees for 16-18 minutes.
