原料

茄子: 3個, 蔥: 適量, 豆瓣醬: 適量, 蒜: 4瓣, 醋: 適量, 糖: 適量, 老抽: 適量, 生抽: 適量, 鹽: 克, 辣椒: 1、2個, 肉糜: 100g, 生粉: 適量, 料酒: 適量

步驟

1茄子 洗凈 切塊 大蒜 去皮 切末 肉糜 加1湯匙生粉、0.5湯匙料酒 拌勻 (肉糜化凍來不及 直接用現成的肉圓了)

2蔥 洗凈 切段 辣椒根據耐辣程度 去籽 切末

3熱鍋 冷油 (油多一點) 加入茄子 小火 (茄子吸油) 而後 辣椒爆香 倒入肉糜 翻炒

4茄子 和 肉糜一起翻炒

51湯匙 老抽、2湯匙 生抽、1湯匙醋 加少量水 滾煮 茄子煮軟

6加 適量鹽糖 少量醋 調味 加蔥花 起鍋
