原料

材料:, 1) 魚片 (洗凈,用一點鹽和胡椒粉腌10分鐘), 2) 薑片, 3) 青蔥絲, 4) 紅辣椒碎, 5) 蒜碎, 6) 小紅蔥碎, 7) 青蔥丁, 調味料:, 1) 蒸魚醬油 1湯匙, 2) 蚝油 ½茶匙, 3) 料酒 1茶匙, 4) 糖 少許, (拌成醬汁備用), , , Ingredients:, 1) Fish fillets (wash, marinate with some salt and pepper for 10 mins), 2) ginger slices, 3) shredded green onion, 4) chopped red chili, 5) chopped garlic, 6) chopped shallot, 7) diced green onion., Seasonings:, 1) Steam fish soy sauce x 1 tbsp, 2) oyster sauce x 1 /2 tsp, 3) shaoxing wine x 1 tsp, 4) some sugar, 5) mix well and set aside

步驟

1做法: 1) 把魚片擺入蒸盤中,加入薑片,青蔥絲和一點紅辣椒碎,蓋上一層保鮮膜放入蒸鍋內大火蒸上8分鐘。 2) 起油鍋,爆香蒜蔥碎至深金黃色後,加入青蔥丁拌炒一下備用。 3) 蒸好的魚片,拿掉保鮮膜和薑片後,淋入調味料和做法2的蒜蔥油後再放入蒸鍋蒸多1-2分鐘即可。

2Method: 1) Put fish fillet in steam plate; add in ginger slices, shredded green onion and red chili on top , cover with a layer of plastic wrap to steam under high heat for 8 mins. 2) Heat up oil to sauté chopped garlic and shallot till deep golden brown color, add in diced green onion to stir-fry a while and dish up. 3) Throw away the plastic wrap and ginger slices after fish is cooked, pour in the seasoning and method 2 ingredients and steam for another 1-2 mins, serve hot.
