原料

苦瓜: 1根, 雞蛋: 2個, 鹽: 適量, 糖: 適量, 開洋(可不加): 1湯匙

步驟

1苦瓜洗凈 對半切開  用勺子挖出瓜瓤  切5mm薄片 準備一口鍋 鍋內加適量水 加1小勺鹽 水滾 倒入苦瓜片汆燙 苦瓜變深 取出 將苦瓜片放入冷水中降溫 取出苦瓜 去水

2開洋 洗凈 晾乾 2個雞蛋 去殼 加0.5小勺鹽、2湯匙水 打成蛋液

3熱鍋 冷油

4油熱 調中火 倒入蛋液 蛋液膨脹 方面 用鍋鏟搓成小塊 盛出

5鍋內 再加少量油 倒入 蝦皮 煸出香味

6倒入苦瓜

7加半小碗水 加1小勺鹽、1小勺糖 水滾 加入炒雞蛋 翻炒

8加適量鹽糖 調味後 出鍋
